Preparation
Dry roast the foxtail millet flour lightly on low heat for 2 minutes. This step enhances the flavor and prevents clumping during steaming.
Boil water with salt and set aside.
Cooking Steps
Prepare Dough:
- Place the roasted foxtail millet flour in a mixing bowl.
- Gradually pour hot water into the flour while stirring continuously using a spoon or spatula. Mix until it forms a soft, pliable dough.
- Let the dough cool slightly to a manageable temperature.
Shape Idiyappam:
- Grease an idiyappam press or murukku maker with oil.
- Fill the press with the dough.
- Press the dough onto greased idli plates or idiyappam molds in circular patterns to form thin strands.
Steam Cook:
- Heat a steamer or idli cooker with water.
- Place the idiyappam molds in the steamer and steam for 10-12 minutes on medium heat.
- Once done, remove the idiyappam and let it cool for a minute.
