Chicken, poultry, breast, skinless
250 gms (250g)

0.25 cup, halved (50g)

Instructions
Preparation
For chicken:
-Add chicken breast. Pour water just enough to cover the chicken.
-Bring to a boil, then reduce to a simmer.
-Cover and cook for 10–15 minutes (until fully cooked).
-Remove chicken, let cool slightly.
-Shred using forks or fingers.
Cooking Steps
In a large bowl, combine the cooked foxtail millet, shredded chicken breast, cherry tomatoes, cucumber, red onion, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
Pour the dressing over the salad and toss well to combine.
Adjust the seasoning if needed and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
