Preparation
-Separate the egg whites from the yolks.
Cooking Steps
Heat a non-stick pan over medium heat. Add oil or use a light coating of cooking spray.
Add the chopped onion to the pan and sauté for 2-3 minutes until translucent.
Add the chopped spinach and cook for another 1-2 minutes until wilted. add chopped tomatoes now and sauté briefly.
In a bowl, whisk the egg whites with a pinch of salt and pepper.
Pour the egg whites into the pan with the sautéed vegetables. Stir gently and cook for 2-3 minutes until the egg whites are set and scrambled.
Serve hot.
