Instructions
Preparation
Cook red rice according to package instructions. Let it cool slightly before using.
Press the tofu to remove excess moisture.
Cook edamame beans in boiling water for 3-5 minutes. Drain and set aside.
Cooking Steps
Heat a non-stick pan over medium heat. Add a little oil and pan-fry the tofu cubes until golden and crispy on all sides, about 5-7 minutes. Set aside.
Prepare the sesame ginger dressing by whisking together sesame oil, soy sauce , rice vinegar, grated ginger, minced garlic, honey and water. Adjust seasoning to taste.
Assemble the bowl by layering the cooked red rice at the base. Add tofu, edamame beans, cucumber slices, shredded carrot, avocado, and green onion on top.
Drizzle the sesame ginger dressing over the bowl and sprinkle toasted sesame seeds for garnish.
Serve immediately and enjoy!
