Wash the dragon fruit and kiwi thoroughly.
Peel the dragon fruit and kiwi. Cube the dragon fruit into bite-sized pieces and slice the kiwi into thin rounds.
Zest the lemon using a fine grater, ensuring you only remove the yellow part (not the white pith).
