Ingredients
Rice, parboiled, milled
0.5 cup (100g)
Common salt
0.25 tsp (1.25g)
Mustard oil
1 tsp (5g)
Plain Water
1 medium cup (250g)
Black Mustard Seeds
0.5 tsp (2.5g)
Urad Dal (Soaked)
0.5 small cup (50g)
Carrot

Fresh Coriander Leaves (chopped)

Instructions
Preparation
Drain the overnight soaked rice (Parboiled),dal and fenugreek seeds. Grind them to make a paste. Add water in batches and grind again to make a batter with a runny consistency.
Keep the mixture in a warm place and let it ferment for 5-6 hours. Once fermented, Add salt and mix. your dosa batter is ready.
Heat oil in a small pan, add mustard seeds and curry leaves, and temper them. Let them cool before adding to the batter for added flavor.
Cooking Steps
In a mixing bowl, combine the dosa batter with all the vegetables (carrot, capsicum, onion, cabbage, green chilies, and coriander leaves). Add salt to taste and mix well.
Heat an appe pan (paniyaram pan) and lightly grease the cavities with oil using a brush or a small spoon.
Pour a small ladleful of batter into each cavity of the appe pan, filling it almost to the top.
Cover the pan with a lid and cook on medium heat for 2-3 minutes. Once the bottom is golden brown, flip the appe using a skewer or small spatula.
Cook for another 2-3 minutes until both sides are crisp and golden.
Remove the appe from the pan and serve hot.
