Cooking Steps
Step 1: To begin making the Delmonte Beetballs Pasta Recipe, wash lentils well and soak it for 20 minutes
Step 2: Pressure cook the lentils until soft with very little water
Step 3: We want to have a paste on lentils once cooked and not in liquid form
Step 4: Peel the skin of beetroots and grate them
Step 5: Finely chop onions, garlic and keep it aside
Step 6: In a bowl add grated beetroot, lentil paste, chopped onions, garlic, cumin powder, and coriander powder, salt and mix well
Step 7: The mixture should not be firm enough to form balls
Step 8: Heat oil for deep frying in a wide pan
Step 9: Divide the beetroot mix into equal portions
Step 10: Make small lemon sized balls
Step 11: Deep fry them until golden brown
Step 12: Remove from oil and drain on kitchen paper
Step 13: Now cook the pasta as per packet instructions until al- dente
Step 14: Drain from water and rinse with cold water immediately
Step 15: Add 1/2 teaspoon olive oil and rub all over the pasta
Step 16: In a pan heat olive oil
Step 17: Add garlic and fry for a minute
Step 18: Add the herbs and red chili flakes and salt to taste
Step 19: Throw in the cooked pasta and toss well
Step 20: Remove the pasta into serving plates, top with grated parmesan cheese and place the beetballs
