In a large mixing bowl, add boil rice, plain yogurt, and milk. Mix well until the rice is coated with the yogurt mixture.
Add grated carrot and cucumber to the bowl and mix well.
Add salt to taste and mix well.
Add pomegranate seeds and gently mix them into the rice.
Garnish with chopped coriander leaves and serve cold.
