Cooking Steps
Pour the milk into a saucepan and heat it over medium-low heat. Heat it gently until it reaches a temperature of about 180°F (82°C).
Once the milk reaches the desired temperature, remove it from the heat and let it cool down.
When the milk has cooled to around 110-115°F (43-46°C), it's ready for the yogurt culture.
In a small bowl, mix the plain yogurt with a small amount of the cooled milk to make a smooth paste. This will help distribute the yogurt culture evenly in the milk.
Add the yogurt-milk mixture back into the rest of the cooled milk and stir gently to combine and place for about 6-8 hours.
Once the yogurt is ready, refrigerate it for several hours to chill and further thicken.
