Ingredients
Cucumber
1.5 cup, chopped (300g)
lemon juice
2 tbsp (30g)
Fresh cilantro (chopped)
2 tbsp (20g)
Plain Water
1 small glass (200g)
Olive Oil
1 tsp (5g)
Black Pepper
1 tsp (2g)
Common salt
0.5 tsp (2.5g)
Clove Garlic, Minced
1 tsp (5g)
Chopped Onion
0.5 small cup (50g)
Chopped Green Chilli
2.5 tsp (5g)
Turmeric powder
0.25 tsp (1.25g)
Instructions
Cooking Steps
Heat a pan over medium heat and dry roast cumin seeds for a minute.
Add minced garlic, and chopped green chili. Sauté for a few seconds.
Add chopped onion and sauté for a minute.
Add chopped cucumber. Mix well.
Add turmeric powder, black pepper powder, and salt. Mix well.
Add water and bring it to a boil. Let it simmer for 10-12 minutes.
Turn off the heat and let the mixture cool down.
Once it cools down, blend the mixture until smooth.
Pour the soup into a large bowl, add lemon juice, and mix well.
Chill in the refrigerator for at least 2 hours.
Before serving, stir in the chopped fresh coriander leaves.
