Cooking Steps
Step 1: To prepare Creamy Thai Sweet Potato Curry recipe, boil 1 cup of water and add the roughly chopped lemon grass
Step 2: Let it simmer for 5 minutes
Step 3: Switch off, drain the broth and set aside
Step 4: Heat a kadai over a low flame with 2 teaspoons of coconut oil and add the cubed sweet potatoes
Step 5: Add salt, turmeric powder and sprinkle 1 tablespoon lemon grass water (stir and adjust water to cook the sweet potato till it's fork tender) and set aside
Step 6: Heat a pan/kadai with remaining coconut oil
Step 7: Add the sliced onions and keep stirring till they turn transparent
Step 8: Now add the ground spice paste and the lemongrass broth
Step 9: Cover the pan and simmer for 5 minutes
Step 10: Now add the sweet potatoes and the red Thai curry paste
Step 11: Mix well and add the coconut milk
Step 12: Let the gravy cook over low flame for another 5 minutes, add salt and switch off
Step 13: Garnish with peanuts and cilantro
