Cooking Steps
Step 1: To begin making the Creamed Spinach first blanch the spinach leaves in boiling water till they just wilt (about a minute)
Step 2: Drain in a colander and rinse with cold water
Step 3: Squeeze out the water and roughly chop the spinach
Step 4: In a pan heat the butter
Step 5: Add garlic and onions and sauté till the onions just soften
Step 6: Sprinkle some salt and pepper
Step 7: Add the flour, stir and cook for a minute
Step 8: Gradually whisk in the milk
Step 9: Cook stirring till it thickens
Step 10: Add the mustard powder and cheese or cream cheese and mix
Step 11: Stir in the spinach, nutmeg and cook for a few seconds
Step 12: Serve hot
