Cooking Steps
Step 1: To make Cranberry Cookie Recipe, first preheat your oven at 180-degree celsius
Step 2: Line two large Baking Sheet with parchment paper or lightly grease baking sheets with butter
Step 3: Sift flour and salt together in a bowl
Step 4: Keep aside until required
Step 5: Now in the bowl of the Stand Mixer with a paddle attachment or a large bowl (if using the Hand Blender) add softened butter and sugar
Step 6: Whisk the butter and sugar at medium speed, until the butter turns light and fluffy
Step 7: Add the egg, vanilla essence to the butter and sugar mixture
Step 8: Again whisk the mixture for few seconds at medium speed till egg is well incorporated into the batter
Step 9: Add the sifted flour to the batter
Step 10: Gently fold the flour into the batter till all the ingredients are evenly combined
Step 11: Add the cranberries to the cookie batter and mix with the spatula to combine
Step 12: Using ice-cream scooper or spoon drop equal portion of the cookies batter on the greased Baking Sheet
Step 13: Make sure there is some gap between each cookie as they expand in size while baking
Step 14: Bake the Cranberry Cookies for 15 - 20 minutes or till they turn light brown in color
Step 15: Once baked, transfer cookies to a wire rack to cool down
Step 16: Store the Cranberry Cookies an airtight container at room temperature and serve then as a tea time snack along with a hot cup of coffee or tea
