Cooking Steps
Step 1: To begin making the Corn Stuffed Paratha, we have to first wash the corn and keep the potatoes cooked
Step 2: You can either pressure cook the potatoes for 2 whistles or add them to saucepan with water and boil them for 15 mins/until it is cooked
Step 3: Once the potatoes are cooked, peel the skin and add them to a bowl and mash them
Step 4: Once mashed, add chopped coriander leaves, sweet corn and homemade tomato pickle
Step 5: Mix well
Step 6: Add required amount of salt and mix the mixture well
Step 7: Keep aside
Step 8: The corn stuffing is ready
Step 9: Now we have to make the dough for the paratha
Step 10: In a flat bowl add wheat flour, salt and mix
Step 11: Add water little by little and knead the dough until it is smooth and homogeneously mixed
Step 12: Apply a coating of oil on top of the ball of dough and leave it to rest for 10 minutes
Step 13: Next, divide the dough into medium sized balls
Step 14: Take one ball of dough and roll it out until its about 4-5 inches diameter
Step 15: Place one tablespoon of stuffing in the center and join the ends of the paratha dough so that the stuffing in encased in the dough
Step 16: Do the same with the rest of the dough and corn mixture
Step 17: Place a tawa on medium heat and add some oil
Step 18: Place the stuffed paratha on the tawa and cook on both sides until done
Step 19: Drizzle some oil on top of the paratha when cooking on both sides
Step 20: Take off the pan and finish the rest of the rolled out parathas
