Instructions
Cooking Steps
In a large pot, heat oil over medium heat. Add the minced garlic and ginger and sauté for about 1 minute until fragrant.
Add the thinly sliced onion, carrot, and celery. Sauté for another 2-3 minutes until the vegetables start to soften.
Pour in the water and bring it to a simmer. Let it cook for about 5 minutes or until the carrots and celery become tender.
Add the green beans, peas to the pot. Continue to simmer for an additional 5-7 minutes or until all the vegetables are
cooked but still crisp.
Stir in the soy sauce. Taste the soup and adjust the seasoning with salt and pepper if needed.
To serve, ladle the hot vegetable clear soup into bowls. Garnish with parsley on top for added flavor and garnish.
