Poha (Raw)
1 cup (200g)
Bhuna Chana (Roasted chana)
3 tbsp (45g)
Raw Peanut
2 tbsp (30g)
Common salt
0.5 tsp (2.5g)
Red chilli Powder
0.25 tsp (1.25g)
Turmeric powder
0.25 tsp (1.25g)
Olive Oil

Curry Leaves

Instructions
Preparation
Dry roast the poha in a wide pan on low heat until it becomes crisp but not browned. Set aside.
Roast peanuts and bhuna chana separately on low heat until aromatic. Remove their skins if needed.
Rinse curry leaves under running water and pat dry to avoid splattering during tempering.
Cooking Steps
Heat oil in a large pan over medium heat. Add black mustard seeds and let them splutter. Add curry leaves sauté for 30 seconds.
Add roasted peanuts and bhuna chana to the pan and sauté for 1-2 minutes until they are lightly toasted.
Lower the heat and add turmeric powder, red chili powder, and salt. Stir well to combine.
Add the crisp roasted poha to the pan and gently mix everything together using a spatula. Ensure the masala evenly coats the poha.
Turn off the heat and allow the Chivda Namkeen to cool completely before storing it in an airtight container.
