Cooking Steps
Rinse the wheat berries in a strainer and drain. In a large pot, add the wheat berries and 4 cups of water. Bring it to a boil, then reduce the heat to low and let it simmer for 50-60 minutes until the wheat berries are tender. Drain any excess water and set aside to cool.
In a large mixing bowl, add the cooked wheat berries, chopped toasted walnuts, chopped red onion, chopped red and green bell pepper, and cooked black beans. Mix well.
Add the chopped chipotle pepper in adobo sauce, freshly squeezed lime juice, chopped fresh cilantro, and salt and black pepper to taste. Mix well to combine all the ingredients.
Chill the salad in the refrigerator for at least 30 minutes before serving.
