Preparation
For Dosa Batter:
-Soak white rice, urad dal, and fenugreek seeds separately for 6 hours or overnight. Drain and blend with water to a smooth, pourable batter. Ferment overnight in a warm place.
For Shredded Chicken:
-Boil or pressure-cook skinless chicken breast, cool it, and shred finely.
Cooking Steps
Prepare Chicken Stuffing:
Heat oil in a pan over medium heat.
Add mustard seeds and let them splutter.
Add chopped onions, green chilies, and grated ginger. Sauté for 2–3 minutes until the onions soften.
Add chopped tomatoes, coriander powder, garam masala and turmeric powder. Cook until the tomatoes soften.
Add the shredded chicken and salt. Mix evenly and cook for 5–7 minutes.
Sprinkle chopped coriander leaves and turn off the heat.
To Assemble the Dosa:
Heat a non-stick or iron tawa over medium heat.
Add salt in fermented batter and mix properly.
Pour a ladle of dosa batter and spread it thin in a circular motion.
Let it cook on medium heat. Drizzle oil around the edges, if needed.
Once the base is crisp, place a spoonful of the prepared chicken stuffing on one half of the dosa.
Fold the dosa in half and press lightly.
Serve hot.
