Instructions
Preparation
Wash chicken bones thoroughly to remove any excess blood or impurities.
Cooking Steps
In a deep pot, combine chicken bones and water.
Add peppercorns, bay leaf, and salt to the pot.
Bring the mixture to a boil over high heat.
Once boiling, reduce the flame to low and simmer for 60–90 minutes with the pot covered.
Occasionally skim off any foam or fat that rises to the surface.
Strain the stock using a fine mesh sieve to collect the clear liquid.
Use the stock immediately or refrigerate.
