Instructions
Cooking Steps
Heat oil in a heavy-bottomed pan over medium heat.
Add onion slices, ginger, garlic, green chilies, and curry leaves. Cook until onions turn translucent.
Add the chicken pieces and sauté for 2-3 minutes until lightly browned.
Add the vegetables (potatoes, carrots, and beans), followed by turmeric powder, pepper powder, and salt. Mix well.
Pour thin coconut milk and water into the pan. Cover and cook on medium heat for 20-25 minutes, or until the chicken is cooked and the vegetables are tender.
Reduce the heat to low. Stir gently and let it simmer for 3-5 minutes (do not boil to prevent curdling).
Remove from heat and garnish with fresh curry leaves. Serve hot.
