Preparation
-Blanch the chopped spinach in boiling water for 1-2 minutes, then transfer to cold water to retain its color. Blend the blanched spinach into a smooth puree using a blender.
-Wash and cut chicken into small pieces.
Cooking Steps
Heat oil in a large pot over medium heat.
Add the chicken pieces to the pot and cook until lightly browned on all sides (about 5 minutes).
Pour in the water and bring to a gentle boil.
Lower the heat and simmer for 15 minutes until the chicken is tender and cooked through.
Stir in the spinach puree and mix well.
