Boneless, skinless Chicken Breast

Instructions
Preparation
-Cut chicken into small pieces. Set aside.
Cooking Steps
In a bowl, mix rice flour, cornstarch, salt, and pepper.
Add the beaten egg to the bowl and mix well to make a thick batter.
Dip the chicken pieces in the batter and coat well.
Preheat the air fryer or appe maker to 200°C.
Place the chicken pieces in the air fryer or appe maker and cook for 10-12 minutes until golden brown and crispy.
In a pan, heat oil over medium heat. Add chopped onion, green and red bell peppers, chopped garlic, grated ginger, and chopped green chilies. Cook for 2-3 minutes until the vegetables are softened.
Add soy sauce, tomato ketchup, vinegar and salt. Stir well.
Add cornstarch mixed with water and stir until the sauce thickens.
Add the cooked chicken pieces to the pan and mix well so that the chicken is coated in the sauce.
Garnish with fresh coriander leaves and serve hot.
