Instructions
Preparation
Cook Brown Rice: Cook 1/2 cup of uncooked brown rice according to package instructions. Let it cool completely before using.
Marinate Chicken: Dice the chicken and marinate with a pinch of salt, pepper, and ½ tsp soy sauce for 15 minutes.
Cooking Steps
Heat oil in a wok or pan on medium heat. Add the marinated chicken and sauté until fully cooked (about 5-7 minutes). Remove and set aside.
In the same pan, add the remaining oil, minced garlic, and grated ginger. Sauté until fragrant (about 1 minute).
Add chopped carrot, green peas, and half of the spring onions. Stir-fry for 2-3 minutes until the vegetables are tender but still crunchy.
Add the cooled brown rice to the pan and stir well to combine.
Pour in soy sauce, sprinkle black pepper, and adjust salt to taste. Mix thoroughly.
Finally, add the cooked chicken and the remaining spring onions. Stir everything together and cook for another 2-3 minutes.
Serve hot and garnish with coriander leaves.
