Instructions
Cooking Steps
In a large pot, cook chicken over medium heat until browned.
Add onions, bell peppers and garlic. Cook until vegetables are tender.
Add cumin, smoked paprika, salt, and pepper. Stir to combine.
Pour in water and bring to a boil.
Reduce heat and simmer for 20 minutes.
Remove from heat and let the soup cool slightly.
Add cilantro.
Puree the soup using an immersion blender or transfer to a blender and puree until smooth.
