Ingredients
Cauliflower
1 cup, chopped florets (200g)
Chopped Onion
0.5 small cup (50g)
Clove Garlic, Chopped
2 clove (6g)
Coconut Oil
0.5 tsb (2.5g)
Common Salt
0.5 tsp (3g)
Coconut Milk
2 tbsp (30g)
Fresh Coriander Leaves (chopped)
1 tsp (5g)
Plain Water
2 medium cup (500g)
Instructions
Cooking Steps
Heat oil in a large pot over medium heat.
Add chopped onion and sauté for 2-3 minutes until they turn translucent.
Add minced garlic and sauté for another 1-2 minutes until the raw smell goes away.
Add chopped cauliflower and sauté for 2-3 minutes until they start to soften.
Add salt to taste.
Add water and bring to a boil. Reduce heat to low and let the soup simmer for 10-15 minutes or until the cauliflower is cooked through.
Remove from heat and let it cool down a bit before blending it into a smooth puree using a blender. Add coconut milk and blend again until smooth.
Reheat the soup and serve hot.
