Step 1: To make carrot casserole, first heat oil in a pan

Step 2: Add mustard seeds and let it cook for 15 seconds

Step 3: Now add onion and ginger and let it cook till the onion becomes soft

Step 4: Now add carrots, salt and let it cook till the carrots become soft

Step 5: After cooking, add curry leaves, sambar powder, cardamom powder, salt and mix it

Step 6: After 1 minute add rice and mix

Step 7: Now add green coriander, a tablespoon of ghee and mix well

Step 8: Serve hot
