Preparation
-Blanch cauliflower florets in hot water for few mins.
Cooking Steps
Heat oil in a kadai or a large pan over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions, ginger, garlic. Sauté for 2-3 minutes until the onions turn translucent.
Add chopped carrots and sauté for another 2-3 minutes until they start to soften.
Add cauliflower florets, coriander powder, turmeric powder, red chili powder, and salt. Mix well, ensuring the vegetables are coated in the masala.
Cover the kadai with a lid and let it cook for 10-12 minutes over medium heat until the vegetables are cooked but still have a crunch.
Garnish with fresh coriander leaves and serve hot.
