Instructions
Cooking Steps
Heat oil in a large pot over medium heat. Add chopped onions and minced garlic and sauté for 2-3 minutes until the onions are translucent.
Add chopped carrots, cauliflower florets, and green beans to the pot and stir well.
Add water, dried thyme, dried rosemary, cumin powder, salt, and pepper. Stir well.
Bring the soup to a boil and then reduce the heat. Cover and simmer for 20-25 minutes until the vegetables are tender.
Let the soup cool for a few minutes and then blend it until smooth using an immersion blender or a regular blender.
Return the blended soup to the pot and reheat it over medium heat.
Adjust the seasoning as per your taste.
Garnish with fresh parsley and serve hot.
