Carrot
1 cup, chopped (200g)
Chopped Onion
0.5 small cup (50g)
Clove Garlic, Chopped

Olive Oil

Plain Water
2 medium cup (500g)
Fresh Coriander Leaves (chopped)

Instructions
Cooking Steps
Heat oil in a pan over medium heat. Add onion, garlic, and ginger and sauté for 2-3 minutes until they turn translucent.
Add chopped carrots and sauté for another 2-3 minutes until they turn slightly brown.
Add 4 cups of water, salt, and pepper. Bring to a boil and reduce heat to low.
Cover the pan and let the soup simmer for 20-25 minutes until the carrots are soft and tender.
Turn off the heat and let the soup cool down for a few minutes.
Blend the soup in a blender until smooth.
Pour the soup back into the pan and reheat it.
Garnish with fresh coriander leaves and serve hot.
