Step 1: To make carrot and capsicum casserole, first heat ghee in a pan

Step 2: Add cumin seeds, green chillies and onions

Step 3: Cook onion till it turns golden

Step 4: After curry is cooked add curry leaves and capsicum

Step 5: Cook until the capsicum becomes soft

Step 6: After it becomes soft, add grated carrots, cooked rice and mix

Step 7: After mixing, add salt, red chili powder and black pepper powder

Step 8: Mix and cover the pan

Step 9: Allow to cook for 2 minutes, open the pan and garnish with green coriander

Step 10: Serve carrot and capsicum pulao along with boondi raita and papad for dinner
