Cooking Steps
Step 1: To begin making Calamari Roast Recipe (Kerala Style Squid), in a pressure cooker, take cleaned squid rings with turmeric, salt and ¼ cup water
Step 2: Pressure cook for 1 whistle
Step 3: Lower the flame and cook for 10 minutes
Step 4: In a pan, dry roast fennel and black pepper for a minute
Step 5: Move it to the blender
Step 6: Add meat masala along with fennel and black pepper and make a fine powder
Step 7: In a blender, coarsely blend together shallots, ginger and garlic
Step 8: Heat oil in a pan
Step 9: (Preferably cook in an earthenware for that extra flavour and aroma) Add mustard seeds and allow them to splutter
Step 10: Once they splutter, add the shallot-ginger-garlic mix in and stir well
Step 11: Tear the curry leaves and add them in the pan
Step 12: You can add in the whole sprig too
Step 13: Stir and cook well on medium heat till the onions turn translucent
Step 14: Now add chopped tomatoes
Step 15: Cook till the tomatoes have softened
Step 16: Mash the tomatoes nicely
Step 17: Now add chilli powder, coriander powder and mix well for 30 seconds
Step 18: Add the cooked squid from the pressure cooker
Step 19: If there is any water add that in too
Step 20: Do not discard this since a unique taste is delectable in the stock
Step 21: Mix well
Step 22: Keep mixing at intervals till the water has evaporated a little
Step 23: You neither want a gravy consistency nor should it be very dry
Step 24: Now add fennel, black pepper, meat masala in
Step 25: Mix properly
Step 26: Adjust the salt
