Preparation
Rinse the brown rice and soak it in water for 30 minutes.
Drain the water and set the rice aside.
Cooking Steps
Heat oil in a heavy-bottomed pressure cooker over medium heat.
Add cumin seeds, Sauté for a few seconds until aromatic.
Add sliced onions and green chilies. Sauté until the onions turn golden brown.
Add ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
Add chopped tomatoes and cook until they soften and blend into the mixture.
Mix in turmeric powder, red chili powder, and garam masala. Stir well.
Add all the vegetables (carrots, beans, cauliflower, peas) and sauté for 2-3 minutes.
Drain the soaked brown rice and add it to the pan. Stir gently to coat the rice with the spices.
Add 2 cups of water and salt to taste.
Close the pressure cooker. cook for 2 whistles.
Garnish with chopped coriander leaves and serve hot.
