Cooking Steps
Step 1: To begin making the Crepes with Broccoli and Cheese, we will first make the crepes according to the instructions
Step 2: You will get approximately six crepes with the recipe

Step 4: Keep the prepared crepes aside, covered to stay soft
Step 5: Next we will begin to prepare the filling for the crepes
Step 6: Heat a saucepan or a skillet on medium heat; add in the butter and red bell peppers
Step 7: Saute the bell peppers on medium heat until lightly roasted for a couple of minutes
Step 8: Next add in the chopped broccoli, sprinkle some salt and allow it cook until soft
Step 9: (make sure to add just a pinch of salt, as the mustard and cream cheese contains salt as well)
Step 10: This will take 3 to 4 minutes
Step 11: Once the broccoli is lightly steamed and cooked, turn off the heat
Step 12: Stir in the dijon mustard and the cream cheese into the broccoli and pepper mixture
Step 13: The mixture will looks like a thick broccoli sauce
Step 14: Check the salt and spice levels and adjust to suit your taste
Step 15: Our final step is to spoon the Broccoli and Cream Cheese mixture into the crepes and roll it into a cylinder
Step 16: Place the crepe on a flat surface; and spoon a tablespoon or more of the filling on the center of each crepe
Step 17: Fold the crepe to make a roll and place the seam side down on a baking dish or a baking platter
Step 18: Proceed the same way with the remaining crepes
Step 19: You can serve the crepes as it is, or sprinkle the cheese on the top and broil in a preheated oven until the cheese melts
Step 20: You must do this process only when you are ready to serve
