Instructions
Preparation
-Wash, trim/cut asparagus and broccoli and blanch for few mins.
Cooking Steps
Heat a oil in a pan.
Add blanched asparagus, broccoli, Brussel sprouts and cubed tempeh to the pan.
Cook the vegetables and tempeh until vegetables tender and the tempeh is lightly browned.
Once the vegetables and tempeh are done, transfer them to a large bowl. In a bowl, whisk together lemon juice, salt, and pepper to make the dressing.
Add cooked vegetables, tempeh to the bowl with the dressing. Toss gently to coat the salad with the dressing.
Sprinkle with fresh parsley and serve.
