Preparation
Rinse fresh butterfly pea flowers gently under cold water to remove any dirt or impurities.
In a small bowl, take 1 tsp chia seeds, Add 2–3 tbsp water and let the seeds soak for 30 mins until they form a gel-like consistency.
Cooking Steps
Boil water in a small saucepan over medium heat.
Add 2 butterfly pea flower, cinnamon stick and crushed ginger to the saucepan
Let the mixture simmer for 2–3 minutes until the water turns a vibrant deep blue color.
Turn off the heat and strain the tea into a cup.
Add 1 tsp lemon juice and soaked chia gel to the hot or warm blue tea.
Stir well to ensure the chia seeds are evenly distributed.
