Instructions
Preparation
Rinse 100g of dry black masoor lentils thoroughly under running water. Boil them in water for about 15-20 minutes or until tender. Drain and set aside.
In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, salt and black pepper. Adjust flavors as desired.
Cooking Steps
In a large mixing bowl, combine the cooked lentils and shredded carrots.
Drizzle the apple cider vinaigrette over the lentils and carrots. Toss well to coat evenly.
Sprinkle chopped parsley over the top and gently mix.
Transfer to serving bowls and garnish with additional parsley if desired.
Serve immediately or refrigerate for up to 24 hours for the flavors to blend.
