Mustard seeds
1 tbsp (15g)
Plain Water
2 medium cup (500g)
Black Salt
0.5 tbsp (7.5g)
Common salt
0.5 tbsp (7.5g)

-Roughly grind the mustard seeds
Cooking Steps
Rinse the black carrots thoroughly and peel them. Cut them into thin rounds.
In a large clay container, add the black carrot rounds, roughly ground mustard seeds, black salt, white salt and enough water to cover the carrots.
Stir well and cover the container with a muslin cloth or a lid that is not airtight.
Leave the container in a warm place for 3-4 days to ferment. The longer you ferment it, the tangier it will taste.
Once the kanji has fermented, strain the liquid using a fine-mesh strainer.
Transfer the liquid to a glass bottle and refrigerate it until chilled.
To serve, pour the chilled kanji into glasses.
