Preparation
-Wash and soak black chana in water overnight.
-Pressure cooked soaked black chana for 3-4 whistles, Drain keep aside.
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and green chili and sauté for 2-3 minutes until the onions turn translucent.
Add chopped tomatoes and cook for 3-4 minutes until they soften and turn mushy.
Add coriander powder, cumin powder, asafoetida, and salt. Stir well.
Add boiled chana, moong sprouts, and crumbled paneer. Mix well, ensuring the vegetables are coated in the masala.
Cover the pan with a lid and let it cook for 5-10 minutes over medium heat until the vegetables are cooked.
Garnish with fresh coriander leaves and serve hot.
