Cooking Steps
Step 1: To begin making the black bean soup with Mojo sauce first cook beans till they become soft
Step 2: You can either pressure cook them or cook them in a saucepan on the stove top
Step 3: In a saucepan, heat the oil
Step 4: Add garlic and onion
Step 5: Sauté till the onion becomes translucent
Step 6: Add capsicum and carrot
Step 7: Stir and cook covered for 2-3 minutes
Step 8: Add some water if required
Step 9: Add the tomatoes, beans, cumin, oregano, chilli flakes and salt
Step 10: Add some water and bring it to a boil
Step 11: Mash some of the beans with a ladle to thicken the soup
Step 12: (You can blend some beans in a food processor if you want a thick soup)Serve in individual bowls, topped with a spoonful of mojo sauce and garnished with herbs
Step 13: For the mojo sauce: Whisk together all the ingredients and use as required
Step 14: Serve Black Bean soup with Mojo on its own or with baked Tortilla chips for a delicious light meal
