Cooking Steps
Step 1: To begin making Bengali Style Dimer Chop Recipe, prepare the potato mixture first
Step 2: Clean the potatoes and pressure cook potatoes till done
Step 3: Or you can cook the potatoes in steamer as well
Step 4: Once the potatoes are cooled a bit, peel and mash them into a smooth paste, in a hand mixer
Step 5: In a kadai, dry roast the cumin powder and whole red chillies in a pan and grind them in fine powder
Step 6: Now heat oil in a pan and add chopped onion
Step 7: When they become translucent add ginger paste, garlic paste, chopped green chilies and fry till raw smell goes off
Step 8: Add turmeric powder
Step 9: Fry for few seconds
Step 10: Remove from heat
Step 11: Now add this fried masala to the mashed potato
Step 12: Add the cumin-red chillie powder, garam masala powder
Step 13: Adjust salt
Step 14: Mix very well
Step 15: Let the mixture cool completely
Step 16: Add the chopped coriander leaf and mix well
Step 17: While frying the masala hard boil the eggs
Step 18: Let them cool
Step 19: Shell them and cut them in halves lengthwise
Step 20: *To make devilled eggsIn a medium sized bowl beat 2 eggs
Step 21: Add cornflour, salt, black pepper powder and 3-4 tsp of water
Step 22: Make a smooth batter
Step 23: Divide the potato mixture in 12 equal portions
Step 24: Now cover the plane surface of the eggs with the potato mixture in the shape of a full egg
Step 25: Take bread crumbs in one bowl, flour in another bowl
Step 26: Coat the ‘Dimer Devil’ with flour
Step 27: Then dip in the egg wash and then finally coat them in bread crumbs
Step 28: If you feel that the ‘Devils’ are not coated well, then repeat the process with bread crumb
Step 29: Rest the ‘Devils’ in a container in the refrigerator atleast for 30-45 minutes
Step 30: Heat oil in a deep frying pan or kadai
Step 31: Slide the ‘Devils’ in hot oil (do not over crowd) and fry them till brown and crisp
Step 32: Serve hot with salad, kasundi and tomato sauce
