Preparation
Rub the brinjal slices with turmeric powder and salt evenly. Let them sit for 5-10 minutes.
Cooking Steps
Brush a nonstick pan with oil and heat on medium flame.
Place the brinjal slices on the pan in a single layer (avoid overcrowding).
Cook each slice for 3-4 minutes on one side until golden brown.
Flip the slices and use the remaining oil to brush the pan or drizzle lightly.
Cook the other side for another 3-4 minutes, ensuring the slices turn golden and tender.
Sprinkle red chili powder while cooking for added spice.
Remove from the pan and serve hot.
