Preparation
For Boiling Quinoa:
-Rinse quinoa, boil with water, simmer 12–15 mins till absorbed, fluff & use.
For Boiling Rajma, beans & chickpeas:
-Soak beans/chickpeas 8–10 hrs, rinse, pressure cook till soft (rajma, chickpeas & black beans, whistles 4–5), drain & use.
Cooking Steps
In a mixing bowl, combine the cooked quinoa, boiled mixed beans, and chopped cauliflower. Mix well.
In a pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until the onions turn translucent.
Add the cumin powder, garam masala, salt, and pepper to the pan and stir well.
Add the sautéed onion mixture to the mixing bowl with the quinoa and bean mixture. Mix well.
Using your hands, form small tikkis or patties out of the mixture.
In a pan, heat a little oil over medium heat. Add the tikkis to the pan and cook until they are golden brown on both sides.
Serve hot.
