Preparation
Wash and clean bathua leaves thoroughly to remove dirt and soil.
Finely chop the bathua leaves or blanch them for 1-2 minutes in boiling water, followed by draining and cooling. ( blanching enhances flavor and reduces bitterness but is not mandatory).
Cooking Steps
In a mixing bowl, combine oats flour, oats bran, and finely chopped bathua leaves.
Gradually add warm water to the mixture and knead it into a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 10-15 minutes.
Divide the dough into equal portions and roll out each portion into a round disc (roti) using a rolling pin. Dust lightly with wheat flour if needed.
Heat a skillet or tawa over medium heat. Cook each roti on the tawa until brown spots appear on both sides, flipping as needed (approximately 1-2 minutes per side).
Serve hot.
