Bajra Flour
1 small cup (100g)
Bathua leaves
80 gms (80g)
Warm Water
0.25 small cup (50g)

Preparation
Wash and clean bathua leaves thoroughly to remove dirt and soil.
Finely chop the bathua leaves or blanch them for 1-2 minutes in boiling water, followed by draining and cooling. ( blanching enhances flavor and reduces bitterness but is not mandatory).
Cooking Steps
In a mixing bowl, combine bajra flour, and finely chopped bathua leaves.
Gradually add warm water to the mixture and knead it into a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 10-15 minutes.
Divide the dough into equal portions and roll out each portion into a round disc (roti) using a rolling pin. Dust lightly with flour if needed.
Heat a skillet or tawa over medium heat. Cook each roti on the tawa until brown spots appear on both sides, flipping as needed (approximately 1-2 minutes per side).
Serve hot.
