Instructions
Preparation
-Wash fish and cut into small pieces.
Cooking Steps
Heat the oil in a large pot over medium heat. Add the onions and garlic and sauté for 2-3 minutes until they turn translucent.
Add the carrots, celery, and red bell pepper and sauté for 5-7 minutes until they start to soften.
Add the chopped tomatoes, water, thyme, oregano, salt, and black pepper. Stir well.
Add water and bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes until the vegetables are cooked through and the flavors are well combined.
Add the fish chunks to the pot and let them cook for 10-15 minutes until they are cooked through and flaky.
Garnish with fresh parsley leaves. Serve hot.
