Atta ka Halwa
Aatta ka Halwa is a lighter take on the traditional Indian dessert made with whole wheat flour, brown sugar, and a moderate amount of ghee. This version is less sweet, making it a better choice for those watching their sugar intake or aiming for a balanced diet. It has a rich, nutty flavor from roasted wheat flour and the aromatic touch of cardamom. Optional additions like raisins or nuts can enhance its nutritional profile and taste.

- Heat water in a separate pot until warm, then dissolve brown sugar in it.
Cooking Steps
Heat ghee in a heavy-bottomed pan over low to medium heat.
Add the whole wheat flour and roast it, stirring constantly, until the flour turns golden brown and emits a nutty aroma (approximately 7–10 minutes). Avoid burning by adjusting the heat as necessary.
In the meantime, stir the brown sugar into the warm water until fully dissolved.
Gradually pour the sugar-water mixture into the roasted wheat flour while stirring continuously to prevent lumps.
Cook the mixture for 4–5 minutes, stirring constantly, until the halwa thickens and begins to leave the sides of the pan.
Add cardamom powder, serve the halwa warm in small bowls.
