Olive Oil

Mustard seeds

Curry leaves

Preparation
Peel the ash gourd, remove the seeds, and cut it into small cubes.
Wash thoroughly and keep it aside
Cooking Steps
Heat oil in a pan over medium heat.
Add mustard seeds and let them splutter.
Add curry leaves and sliced green chilies, sauté for a minute.
Add the diced ash gourd, turmeric powder, and salt. Mix well.
Cover the pan and cook for 8-10 minutes, stirring occasionally, until the ash gourd becomes tender.
Once cooked, garnish with fresh coriander leaves.
Serve hot.
