Cooking Steps
Step 1: To make Andhra Style Vankaya Kothimira Karam Recipe, first wash and chop the brinjals
Step 2: Soak it in salt water and keep it aside
Step 3: Now in a mixer grinder, add green coriander, green chillies, ginger, cumin seeds, grind it and make a paste
Step 4: Now heat oil in a pan
Step 5: Add mustard seeds, urad dal and let it crackle
Step 6: After the tempering, add dry red chillies, curry leaves and cook for 10 seconds
Step 7: Now add brinjals and cook till half cooked
Step 8: This may take 8 to 10 minutes
Step 9: Now add ground coriander, salt, mix and cook for 10 minutes
Step 10: Turn off the gas after cooking and serve
