Cooking Steps
Step 1: To begin making the Andhra Style Paruppu Podi, heat oil in a kadhai/wok & roast the red chillies for abaout 3-4 minutes
Step 2: When the chillies are roasted collect them in a plate
Step 3: In the same pan, add 1/2 teaspoon of oil & roast the dals - chana dal, urad dal, toor dal, moong dal and horse gramon low flame until golden brown
Step 4: When done, collect them in a plate
Step 5: Allow the ingredients to cool down completely
Step 6: Grind salt, jaggery, red chillies, hing into fine powder in a grinder
Step 7: Then add in the dals & grind them into coarse powder
Step 8: Andhra Style Paruppu Podi is ready to serve
Step 9: Serve this Andhra Style Paruppu Podi with hot steamed rice with a dash of ghee or gingerly oil and Keerai Sambar for a perfect South Indian meal
