Cooking Steps
Step 1: To begin making the Anda Bhurji Recipe - Spicy Indian Style Scrambled Eggs whisk the eggs in a bowl with milk and salt to taste until light and fluffy and keep aside
Step 2: Into a preheated pan add ghee, the cumin seeds, onions and chopped green chillies and saute till the onions turn slightly caramelized

Step 4: Once the tomatoes have softened, add the whisked eggs
Step 5: Turn the heat to low and keep stirring the eggs until it scrambles
Step 6: It is important to cook on low heat for light and fluffy textured Anda Bhurji
Step 7: Once the Anda Bhurji is cooked, stir in the chopped coriander leaves and turn off the heat
Step 8: Transfer the anda bhurji into a serving plate and serve hot
